This Almond Rice Pilaf is such a great side dish and so fast and easy using instant rice! I love to serve it with chicken and some veggies. Sometimes plain rice is boring and you need a little extra!
Almond Rice Pilaf
Ingredients
- ½ cup chopped onion
- 1-2 garlic cloves minced
- ½ cup slivered almonds
- 1 Tablespoon butter
- 2 cups chicken broth
- 2 cups uncooked instant rice
- Better than Bouillon according to directions
Instructions
- In a saucepan, sauté onion, garlic and almonds in butter until the onion is tender und the almonds are lightly browned. Add rice and stir to incorporate. Add water and better than bouillon; bring to a boil. Stir in rice and cover. Remove from the heat. Let stand for 5-8 minutes or until liquid is absorbed.
Notes
*chicken broth can be substituted for the Better than Bouillon
