Roasted Potatoes with Lipton Soup

If you're looking for a simple and delicious side dish, these oven roasted potatoes are a must-try! They come out perfectly golden and crispy on the outside while staying soft and fluffy on the inside. Personally, I like to peel and dice mine into bite-sized pieces, but you can absolutely leave the skins on and cut them into larger chunks—roast them however you love!

Even better, leftovers never go to waste. The next morning, just sauté them in a skillet and toss them into breakfast burritos for an easy and satisfying meal. Whether you're serving them with dinner or repurposing them the next day, this versatile potato recipe is one you’ll want to keep on repeat!

Instructions

This dish could not be simpler! Just add all the ingredients to a 9x13 size dish and stir really well until potatoes are well coated. Bake in a preheated oven for 30-35 minutes stirring every 12 minutes or so until tender.

Top Tip

Make sure every potato is well coated before baking. When stirring while baking before and scrape up the bottoms pieces and stir everything around as it cooks.

Ingredients

  • 2 pounds baking potatoes peeled and diced into bite size chunks
  • 1 envelope Lipton Onion Soup Mix
  • ⅓ cup olive oil
  • ½ teaspoon onion powder Use ¼ teaspoon if this is to strong
  • ½ tsp powder Use ¼ teaspoon if this is to strong
  • sprinkle pepper

Instructions

  • Preheat oven to 425℉
  • Put all ingredients in 9x13 dish and stir until potatoes are well coated.
  • Cook 30-35 min stirring occasionally. Be sure to scrape bottom of pan when stirring while cooking.
