Honestly, I love this salad! It has a light lemon taste with a slight tartness from the red wine vinegar. The oregano sends it over the moon and you will not be disappointed. You can honestly use any veggies you like. I hope you try it and let me know how you like it!!?
Greek Inspired Grilled Chicken Salad
Ingredients
Greek Chicken Marinade
- ⅓ cup olive oil
- 2 Tablespoons lemon juice fresh is best!
- Zest of 1 lemon
- 2 teaspoons Greek seasoning blend
- 1 teaspoons sweet paprika
- 1 teaspoon sea salt
- ¼ teaspoon coarse black pepper
- 2 cloves garlic finely minced
- 2 Tablespoons red wine vinegar
- 4 medium chicken breasts bonelesskinless
Greek Salad Dressing
- ¼ cup extra-virgin olive oil- good quality
- 2 Tbsp. red wine vinegar
- ½ lemon juiced
- 1 clove garlic pressed
- 1 tsp. dried oregano
- ¼ teaspoon Dijon mustard
- 3 pinches salt
- 1 pinch coarse black pepper
Salad
- Leafy Greens with any veggies you like- red onion, tomatoes, cucumbers, feta etc...
Instructions
- Grilled Chicken:
- Mix all ingredients except chicken in a jar fitted with a tight lid and shake vigorously. Trim chicken and flatten just a bit until same width. Grab a fork and poke holes all over breasts. Place in a baggie or shallow glass dish and pour marinade over and toss until coated. Store in fridge at-least 20 minutes, but hours is best! Grill at 400 degrees until 165 internal temperature.
- Dressing:
- Put ingredients into jar and shake vigorously. Pour over salad.
- Salad:
- Toss together mixed salad greens, cherry tomatoes, red onions, cucumbers. Optional: feta cheese, Kalamata olives, peperoncini peppers
