This greek inspired grilled chicken salad is so delicious! Honestly, I love this salad! It has a light lemon taste with a slight tartness from the red wine vinegar. The oregano sends it over the moon and you will not be disappointed. You can honestly use any veggies you like. I hope you try it and let me know how you like it!!

This recipe is such a great protein packed meal. Whether lunch or dinner...you will not be disappointed! I have just the chicken marinade recipe here.....but in this recipe card below I have both the salad and chicken!
Ingredients
- olive oil
- lemon juice
- lemon zest
- greek seasoning
- paprika
- sea salt
- pepper
- red wine vinegar
- chicken breasts
- fresh garlic
- oregano
- dijon mustard
- leafy greens
- salad veggies: cucumber, purple onion, fets or mozzarella, tomatoes, olives etc
Instructions
Marinate and grill chicken according to the directions below. Allowing that marinade to work for at least 20 minutes is so important. If you have an hour that is even better! While the chicken grills assemble the dressing and salad. Once chicken is cooked through allow it to rest for a few minutes. Slice and top on to the salad!

Equipment
Having a good gas grill and all the accessories is so important. Here is an affiliate link to some of my favorites! I love to have a good sharp knife, handy cutting board adn salad spinner for all my salad needs. Here is a link to a few of my favs!
Substitutions
This salad is so versatile...don't like onions? Toss them! Like Mozzarella more than Feta? No problem! Make it your own and then let me know how you made it!
Tips
Before marinating your chicken be sure to use a fork and pierce it all over...it makes a huge difference when marinating. Also, if you just aren't dying for a salad...Sometimes I serve this chicken with rice on the side and a veggie such as asparagus or broccoli. It is always a hit!
