Ingredients

  • red leaf lettuce
  • red seedless grapes
  • mandarin oranges
  • red onion
  • slivered almonds
  • fresh orange juice
  • olive oil
  • dry Italian dressing mix
  • red wine vinegar
  • sugar
  • zested orange peel

Instructions

This recipe is so simple, yet so delicious! First, toast those almonds! It truly brings out the flavor! Mix up your dressing using the dry Italian seasoning packet as your base. Slice the grapes in half and thinly slice the onion. Use as much onion as you like. I do not give an amount because that is such a personal taste. Drain the oranges and tear the lettuce. Then just toss all together! You will be coming back for MORE!

HINT: toss together just before serving so the lettuce and almonds stay crisp and crunchy.

Substitutions

  • Lettuce - Red leaf looks so pretty in this salad. But switching it out for green leaf is just as great. Romaine with some spring mix also works really well!
  • Grapes - Again it is all about the color. But is green grapes is all you have available then certainly use them!

Variations

PROTEIN - A great way to make this a main dish is adding grilled chicken! Marinate your chicken in Italian Salad Dressing for about 30-40 minutes then grill, slice and top on salad!

Storage

This salad is best tossed and eaten the same day. If you suspect there will be left overs then keep everything separate and toss individual salads. The fruit will make your lettuce wilt in the fridge and the almonds get soft.

The vinaigrette, however, will stay for a week in the fridge.

Ingredients

Salad

  • 1 head red leaf lettuce
  • ½ bunch red seedless grapes halved
  • 1 small can mandarin oranges drained
  • Thinly sliced red onions to taste
  • ¼ cup slivered almonds toasted

Orange Juice Vinaigrette

  • ⅓ cup fresh orange juice
  • ¼ cup olive oil
  • 1 Tablespoon dry Italian dressing mix
  • 2 Tablespoons red wine vinegar
  • 2 Tablespoons sugar
  • ½ teaspoon zested/grated orange peel

Instructions

  • Mix all dressing ingredients together until well combined. Cut lettuce to bite size pieces. Toss all other salad ingredients. Serve dressing on side or toss all together just before serving.
