These potatoes are perfect for breakfast, lunch or dinner and any time of year. I mean who doesn't love a good potato side dish?!

Ingredients

POTATOES of course! 🙂

  • olive oil
  • paprika
  • smoked paprika
  • chili powder
  • salt
  • pepper
  • potatoes

Instructions

This recipe comes together so quickly. I add all the ingredients to a bowl and keep the potatoes separate just until the oil and spices are well combined. Then stir in the potatoes until well coated. Spread the potatoes on a baking sheet and bake. That is all there is to it! See the video below for a hands on view.

Yours look large and not like a small hash brown, can mine be smaller?

YES! I do mine both ways and sometimes I like a fluffier potato on the inside and leave them larger

How can I get them crispier?

Bake straight on pan instead of a silicone mat. And after 30 minutes of baking increase the heat to 425 degrees and cook for another 5-10 minutes.

Storage

These store great in the refrigerator if I actually have left overs. I like to air fry mine at 400 degrees for about 4 minutes then flip for another 3 minutes or until heated through.

Spicy Hashbrowns

These spicy roasted potatoes are crispy, bold, and bursting with flavor! Quick to make and perfect as a side for breakfast, chicken, or steak.

Ingredients

  • 1 Tablespoon olive oil
  • ¼ teaspoon paprika
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon chili powder heaping if like spice
  • ¼ teaspoon salt
  • ⅛ teaspoon ground pepper
  • 1 ½ pounds diced potatoes About 3 cups

Instructions

  • Preheat oren to 400°
  • Combine first 6 ingredients in a large bowl; stir well.
    Add potatoes; stir well to coat.
    Place potatoes in a single layer on a baking sheet coated with cooling spray. (Can use non stick mat or parchment)
    Bake at 400 for 30 minutes stirring half way through.
    If you want them with a slight crisp turn oven up to 425° after the 30 min and cook additional 5-10 minutes until browned.

Notes

I usually leave mine a little chunkier than a true diced hash brown...but cut them anyway YOU like!
