Ingredients

  • white kernel corn
  • butter
  • cream cheese
  • onion
  • red bell pepper
  • green bell pepper
  • white pepper
  • granulated garlic

Instructions

Start by melting the butter in a large skillet or medium saucepan over medium heat. Once melted, add the chopped vegetables and sauté them until they’re tender and fragrant. Next, add the cream cheese and let it begin to melt, stirring gently to combine. Then, add the corn and continue stirring until the mixture is creamy and the cream cheese is fully smooth. Sprinkle in the seasonings and mix well so every bite is flavorful. Finally, pour the creamy corn mixture into a casserole dish and bake at 350°F for about 20 minutes, or until it’s hot and the edges are slightly bubbling. Serve warm!

Storage

I love how this side dish reheats! It's so easy. You may need to add a splash of milk when reheating in the microwave, but it comes back together easily and is equally delicious! I like to use these storage containers for left overs.

Can I use low fat cream cheese?

Yes! I use it in this recipe all the time!

Will any color bell pepper work?

Absolutely! At Easter I like to use yellow and green!

I don't have oven space at the Holidays. Can I just cook on top of the stove?

Yes! Simmer over medium low heat for 15-20 minutes until heated through and creamy.

Ingredients

  • 22-30 oz white shoepeg kernel corn drain one can only
  • 4 Tablespoons butter
  • 4 ounces cream cheese
  • ¼ cup onion chopped
  • ⅓ cup bell peppers chopped
  • ⅛ teaspoon white pepper
  • ⅛ teaspoon granulated garlic or garlic powder

Instructions
