- veggies of choice - squash, zucchini, bell pepper, onion
- garlic cloves
- beef strips or flank steak
- stewed tomatoes
- granulated garlic
- pepper
- salt
- Italian seasoning
- dried basil
- red pepper flakes
- butter
- Parmesan and parsley if desired

Instructions
This quick and hearty Linguini with Beef and Tomatoes is a budget-friendly, family-approved dinner perfect for busy weeknights. Tender linguini is tossed with seasoned tender beef, tomatoes, veggies and herbs for a satisfying one-pan meal that’s ready in just 30 minutes.
Start by cooking the pasta and seasoning the beef. Then saute the veggies until crisp tender. Add a little olive oil to the skillet and cook the garlic a few seconds until fragrant then add the beef strips. Cook the beef until no longer pink and add in the rest of the ingredients until hot. Stir in the noodles and veggies and serve!

Tips
Do not overcook your veggies. Just saute until crisp tender so you do not end up with mushy zucchini! 🙂
I personally prefer flank steak for this recipe. But I have also sliced round steak SUPER thin as well for a more budget friendly meal!
Variations
- Pasta - feel free to change the name to spaghetti or thin spaghetti instead of linguini! HAHA!
- Spicy - for more heat increase the red pepper flakes in this recipe to ¼ teaspoon and add a bit more pepper to the beef

If I have enough veggies in this dish I just serve with a slice of bread. French bread or Sourdough toasted with garlic butter is perfect! Or add a side salad to round out the meal. Everyone will be full when dinner is over.

Linguini with Beef and Tomatoes
Ingredients
- 12-16 ounces Linguini Noodles COOKED
- 1 Tablespoon olive or vegetable oil
- 1 cup veggies bell peppers, zucchini, squash, onion etc
- 2 cloves garlic minced
- 1 pound beef strips for stir-fry or beef flank steak thinly sliced
- 14.5 oz can stewed tomatoes undrained
- 1 teaspoon granulated garlic divided
- ¼ teaspoon pepper
- ¼ teaspoon salt
- 1 teaspoon Italian seasoning divided
- ¼ teaspoon dried basil
- Pinch red pepper flakes
- ½-1 Tablespoon butter
- Parsley for garnish
- Freshly shredded Parmesan cheese if desired
Instructions
- (Cook linguini noodles while starting to prep the meal)In 12-inch skillet, heat oil over medium-high heat. Cook vegetables in oil about 3 minutes, stirring frequently. Until crisp tender and remove from pan. Sprinkle beef with pepper, ½ teaspoon of granulated garlic and ½ teaspoon Italian seasoning blend. Add a little more oil to pan and add garlic. Cook just until fragrant. Stir in beef. Leave undisturbed in single layer for about 45 seconds. Cook 5 to 6 minutes, stirring frequently, until no longer pink.
- Stir in tomatoes and rest of seasonings. Add butter. Cook 2 to 3 minutes, stirring frequently and breaking up tomatoes slightly with spoon, until mixture is hot. Stir in pasta. Cook 1 to 2 minutes, stirring constantly, until pasta is well coated and hot. Stir in veggies and serve. Sprinkle Parmesan cheese if desired.
