Ingredients

  • boneless/skinless chicken breasts
  • assorted fresh vegetables
  • olive oil
  • granulated garlic
  • black pepper
  • dry Italian seasoning dressing packet mix
  • chicken broth
  • water
  • instant white rice

Instructions

Heat the olive oil in a soup pot and once hot add chicken pieces. Cook the chicken until done. Add broth, water, veggies and seasonings and bring to a boil. Reduce heat to simmer and cook for 5 minutes. Add rice and remove from heat and let stand for 5 minutes then serve!

Equipment

A nice soup pot is worth the money and storage space. One with a heavy bottom will help with creamy soups from sticking quite as quickly. Here is a link to a good one!

Storage

If you plan to have left overs of this soup I do suggest serving the rice on the side. So make the soup and rice separately. This way the rice doesn't absorb all the yummy broth over night.

Veggies

This soup is so versatile! The veggies we have tried are: broccoli (a fav), cauliflower, asparagus (cut into ½ inch pieces), onion, red bell pepper, and carrot (diced small).

Ingredients

  • ¾ pound boneless skinless chicken breasts cut into bite-size (I use closer to a pound)
  • 2 cups assorted fresh vegetables sliced carrots, broccoli florets, Asparagus pieces, chopped red peppers
  • ½ Tablespoon olive oil
  • ½ teaspoon granulated garlic or garlic powder
  • ½ teaspoon black pepper
  • 1 envelope dry Italian salad dressing mix
  • 14.5 oz chicken broth canned
  • 1-½ cups water
  • ½ cup instant white rice uncooked

Instructions

  • Heat olive oil in pot until hot.
  • Add chicken and cook. Stirring chicken in hot oil on medium-high heat 5 minutes or until chicken is done.
  • Add broth, water, vegetables and dressing mix.
    Bring to a boil; cover pot. Simmer on low heat 5 minutes. Stir in rice, cover and remove from heat. Let stand, covered, 5 minutes.
